Cheesy Zucchini Chicken “Bun” Burgers

Try this low-carb, high protein alternative to traditional burgers where the “buns” are actually the baked patties made of chicken and zucchini.

For the Patties:

  •  2 medium zucchinis
  •  1 lb. ground chicken
  •  1 cup shredded Mozzarella cheese – divided: ½ cup for mixture, ½ cup for topping
  •  1 large egg
  •  1 tsp garlic powder
  •  1 tsp onion powder
  •  1 tsp paprika
  •  1 tsp cumin powder
  •  salt and pepper to taste

Instructions:

  • STEP 1
Grate the zucchini and place in a clean paper towel to absorb excess liquid.
  • STEP 2
In a large bowl combine all the ingredients (only half the Mozzarella) and mix thoroughly.
  • STEP 3
    Preheat oven to 400 degrees.
  • STEP 4
Form the patties. Spoon mixture on the baking sheet lined with parchment paper. Flatten each mound into a round burger-bun shape. You want them thin, flat and even so they cook uniformly.
  • STEP 5
Add the rest of the Mozzarella on top.
  • STEP 6
Bake 20-25 minutes or until the chicken is cooked through.
  • STEP 7
Layer the bottom patty “bottom bun” with anything of your choosing such as lettuce, tomato, avocado, salsa, spinach, etc.
  • STEP 8
Place the top patty “bun” to close the sandwich. Enjoy!
