Pesto Meatball Recipe
Try this delicious Pesto Meatball recipe for great carb fuel-up before a rung or hitting the gym.
Ingredients
- 2 ½ lbs. – Ground Beed – 85% lean
- ½ cup – Almond flour
- 1 Egg
- 1 tsp – Salt
- 48 Oz – Sugar-free pasta sauce
Directions
- In a large mixing bowl combine the ground beef, almond flour, egg, salt & pesto. Using your hands mix all of the ingredients thoroughly. Cover and place in the refrigerator leaving to sit for 3-8 hours.
- In a large sauce pot bring the sugar-free pasta sauce to a light boil and reduce to medium – low, a light simmer.
- Heat a large frying pan over medium heat. Remove the ground beef mixture from the refrigerator and form bite sized meatballs with your hands. In batches sear meatballs 5 minutes per side for a maximum of 15 minutes per batch. Move each batch to the simmering pasta sauce.
